The LEDs don't do all of the clipping, just some squaring of the signal wave after the 2nd stage of the opamp does most of the clip. (high gain of the first stage overloads the second, see Schematic). You can pull the LED's in favor of no squaring, but it sounds a little MORE fizzy, if you can believe that.
